Fresh cheese has more moisture, mostly less fat and salt, but also a lower energy value than hard or otherwise processed cheese. Higher content of water (45 to 80%) significantly reduces the date of expiry. 
Fresh cheese does not have a distinctive taste, but is an excellent carrier of fragrances and flavors, for example from herbs. It is suitable for preparing dishes of cold cuisine. It can be served also as a separate cheese delicacy.
