Pink pancakes with bryndza cheese and arugula

Pink pancakes filled with bryndza cheese are attractive for the eyes and your taste buds. They can be prepared for both sweet and salty using a beetroot juice. The second course or healthy dinner is ready really fast.

Ingredients for dough:

  • 100 g plain wheat flour / spelt flour
  • 2 eggs
  • 120 ml beetroot juice
  • 80 ml soya milk
  • salt
  • olive oil 


  1. Mix together the dough ingredients and leave to stand for 5 minutes. Bake pink pancakes on a little olive oil. We only roast from one side, they will be more beautiful and the solid structure will not be broken.
  2. When the pancakes cool down, rub them with bryndza cheese, roasted onions and sprinkle with arugula and field salad.
  3. Such beautiful colored pancakes can also be prepared as sweet. Just add 2 PL of honey to the dough and spread with curd, jam or other fruit filling.
