Bryndza cheese pagáče

Cheese, potato, cracklings, and bryndza cheese. Pagáče have several tasty variations. This time we were inspired by the recipe for bryndza cheese pagáče. Salty delicacy delicate and supple, but crunchy from the outside, as we all like.

Ingredients for dough:

  • 300 g plain flour
  • 200 g flour
  • 100-150 g boiled potatoes
  • 2 eggs
  • 100 ml oil
  • 300 ml milk
  • 1/2 yeast in a cube
  • salt
  • sugar

For rubbing

egg for rubbing, cumin for sprinkling


  1. The dough is made from the raw materials and left to rise on a baking plate.
  2. Prepare the stuffing. Grate boiled potatoes, add 2 eggs, bryndza heese and cumin.
  3. Roll out the dough to a thickness of about 2 cm and spread with a filling. Fold four times, cover and leave to rise for a while.
  4. Roll out the dough and cut the pancakes. Put on baking tray and baking paper.
  5. Let stand still for a while, spread egg with salt if you want to sprinkle with cumin and bake for 200 °, 20 minutes.
