Quiche with bryndza cheese and spinach

Quiche is a traditional salty French cake. You can prepare it for countless ways. The traditional recipe consists of eggs, bacon, cheese and cream you can constantly change. This time we prepare a quiche cake with bryndza cheese and fresh spinach.

Ingredients for dough

  • 200 g plain flour
  • 80 g butter
  • egg
  • salt
  • Adjust the amount of dough ingredients to the size of the baking pan. The dough will cover the entire bottom and walls of the container, 3-4 mm thick. However, you can also use a puff pastry.


  1. Prepare the dough from the ingredients and let it rest in the refrigerator for an hour.
  2. After removing from the refrigerator, use a food foil to roll the dough to a thickness of about 3-4 mm in the shape of a baking container.
  3. Put the dough in a container and cut off the rest. Prick the dough with a fork and put it in the oven.
  4. In the meantime, we'll prepare the stuffing. Fry onion and garlic in olive oil, add spinach leaves, season, grate a little nutmeg and pot-roast.
  5. Place the mixture on a pre-baked dough. Mix the cream and bryndza cheese with the eggs and pour the cake over the mixture.
  6. Bake for about 30 minutes until the cake gets a nice golden color.

TIP: To avoid baking the dough, prick it with a fork, place the aluminum foil on it and weight down with beans. Do not throw away the baked beans, you can use it again.
